Java Blossom (El Vergel Estate, Colombia | 2024)

Notes: Jasmine, Clementine & Chamomile

The first Carbonic Maceration process done with this variety at El Vergel. CO2 is induced for 96 hours at high pressure, breaking down the cascara during an anaerobic fermentation. The cherries are sun-dried on raised beds for 25 days and stabilized for 45 days before milling.

Symbiosis (Finca Deborah, Panama | 2019)

Notes: Mango, Pineapple & Key Lime Pie

Perfectly ripe cherries are selected twice, before left to anaerobically ferment in hermetically sealed tanks for over 100 hours. The cherries are then removed and left to dry on a three-tiered raised African beds.

Echo (Finca Deborah, Panama | 2019)

Twice-selected cherries arewashed and pulped and theninfused with extra cascara. The coffee-cascara mix undergoes an extended carbonic maceration, in sealed tanks for over 50 hours before being rinsed and dried.

True to its name, this natural yeast inoculated geisha from Finca Deborah dives deep, with a layered, infinite expansion of flavour. Twice selected cherries are added to hermetically sealed tanks and inoculated with natural yeast for more than 100 hours. The extended ferment allows the coffee to absorb the high fruit notes and floral aromatics, whilst the yeast enhances and elevates acidity and body in the cup.
